SMOKEY OLIVE WOOD (SOW) Holm oak fine smoking chips are made from carefully selected Holm oak wood from the Mediterranean coast.

Holm oak belongs to the beech family and grows for up to 500 years and, unlike our usual oaks, is evergreen. Sometimes it is even called the holy oak. It is characterised by its extremely dense wood. It is the acorns of this evergreen oak that are fed on by the world-famous and prized Iberico pigs. 

The smoke of the Holm Oak is intense. It adds a typical mild, slightly nutty aroma to the dish. It is best suited to pork, poultry, fish, beef, lamb, vegetables and sausages.

You can smoke the carvings in a variety of smokehouses, gas, charcoal or electric grills with tightly closing lids.

• To use: the chips should be soaked in clean water for 30 minutes. It is recommended to wrap them in aluminium foil, leaving the ends open, before placing them on hot coals or a grill. Start cooking as soon as the chips start to smoke.
