Pork tenderloin wrapped in pancetta is a simple, festive-looking steak recipe. we love dishes that you can forget about for an hour or more and still have amazing results.

INGREDIENTS

- 1 tablespoon chopped fresh thyme
- 1 tablespoon of chopped fresh rosemary

- 200 g thinly sliced bacon "Pancetta" (Italian boiled and smoked bacon)
- 2 large carrots, chopped
- 1 large onion

PREPARATION
We heat the grill to 230 degrees.
During this time, we prepare the pork loin. Rub it with a spoonful of olive oil, sprinkle with thyme, rosemary, salt and pepper. We put the marinated pork on the heated barbecue grill and fry well from all sides, so the meat is covered with a film, sealing all the juices inside and not losing its juiciness. cook for about 3-5 minutes on each side. Do not use a fork to turn or lift the steak.
We wrap the pork loin fried in this way in thinly sliced pancetta. Lightly coat its surface with olive oil.
Mix the remaining olive oil with chopped carrots and onions. We put the vegetables together with the pork tenderloin in a roasting dish.
Roast for about 25-30 minutes until the pancetta becomes crispy and the pork tenderloin reaches a temperature of 68-70 degrees.
Before cutting and serving to the table, we let the cooked meat "rest" for 10-15 minutes.
