This shrimp and tomato cocktail was made by Andreas Rummel in 2019. March 6 In the one held in Kaunas Master Class!
You will need:
Shrimp
Sweet chili sauce
A thumb-sized piece of ginger
Salts
Mustard
Cherry tomatoes
Lime
Olive oil
Black sesame seeds
French baguette
How to cook?
Sprinkle the shrimp with salt and leave for five minutes to absorb the salt. Preheat the tourist NAPOLEON TravelQ grill up to 200 ºC.
Grill the shrimp on a cast iron plate and the tomatoes on the grill. Grill the tomatoes until their skins begin to burst a little - that's when they will be deliciously fried.
After frying both the shrimp and the tomatoes, place everything in a blender (if you don't have one, you can use any plastic container with a lid and blend by hand). Stir in the sweet chili sauce, a pinch of chutney, grated lime, some freshly grated ginger, lime juice, a good drizzle of olive oil and a little mustard to thicken the consistency. Place the lid on the blender and shake, but do not mash (the shrimp should remain in their normal shape).
Scoop out the inner, soft part of the French baguette, tear it into smaller pieces. Pour shrimp and tomato cocktail on top, sprinkle with sesame seeds. Once the sauce is absorbed into the baguette, all the flavors will be revealed!
